CHEDDAR CHEESE, BACON, & CHIVE SCONE RECIPE
Ingredients:
- 3 large eggs (+ 1 additional large egg for glazing scone tops. I.e., 4 eggs total)
- 1/2 cup heavy cream
- 1.5 teaspoons Dijon mustard
- 4 oz. extra-sharp cheddar cheese
- 1/3 cup cooked bacon, finely chopped
- 6 tablespoons fresh chives, minced
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 12 tablespoons (1.5 sticks) cold butter or margarine, chopped into hunks
- 1 tablespoon water
- parchment paper
Directions:
1. Heat oven to 400 degrees.
2. In large mixing bowl, combine 3 eggs, cream, and mustard.
3. Add cheese, bacon, and chives to mixture.
4. In separate bowl, combine flour, baking powder, and salt; then stir.
5. Add butter to flour mixture, mixing until butter hunks are pea size. (Hand stir or use electric mixer.)
6. Fold flour/butter mixture into egg/cream mixture, stirring until doughy.
7. Line baking sheet with parchment paper.
8. Place dough on floured surface and pat into a 9 inch circle. Cut circle into 12 wedges, then place wedges on baking sheet.
9. In small bowl, stir together 1 large egg and 1 tablespoon water, then brush tops of wedges with this “egg wash.”
10. Bake in 400 degree oven for 15 to 20 minutes, until outside in nicely browned and inside is cooked through.
Serve warm or cooled.
